Eggs and potatoes

2 eggs or egg whites

1 cup cooked potatoes

Sliced red onions

Tsp of chives and cilantro-optional

optional: Side salad of cucumbers, tomatoes, feta cheese, salt, pepper, lemon juice

How to cook potatoes: Dice to bite size pieces and try to keep them the same size. In a greased pan add potatoes in a single layer. Flipping often to keep from burning. Add onions after 10 mins, season with seasoning of choice and place lip on pan. Cook for another 10 mins with lid, stirring frequently. Cook for a final 5 minutes without the lid or until potatoes are tender. Times will vary. Place fried egg on top, top with chives and enjoy with a side salad. Yum!
