1 lb Ground turkey or beef, lean
1 small onion
3 cloves Garlic
2 tbsp Jamaican jerk spice
1 tbsp Cumin seasoning
2 tbsp Coriander
1 can Low-fat unsweetened coconut milk
Brown meat and season with salt, pepper. Add onion once meat is cooked. Sautee for a few minutes then add garlic and all other seasonings. Cook for another minute then add coconut milk. Water is used if the dish looks dry, but otherwise you don’t need to add. Be sure to use HOT water so the temperature of the dish remains the same. Bring dish to boil and simmer on low for 20 minutes. Sauce should thicken a bit. Enjoy over rice.
