Black Bean and Corn Wrap

1 can black bean

1 can corn

1 can chipotle chili salsa or any salsa you like

1 red pepper

1/2 onion

1 tbsp garlic

1 cup mushrooms

1 tbsp Indian curry

1 tbsp Jamaican spice

salt/pepper

1/4 cup fat free cheddar cheese

1 Joseph's wrap

Sauté onions and garlic. Add mushrooms and peppers, mix and cook for 3-4 minutes. Add all other ingredients. Mix well and simmer for 10 mins. Place cheese in wrap and 1 cup of black bean mixture. Fold wrap over and brown each side on the fry pan. Remember to spray pan with olive oil or cooking spray. Flip after a min and brown other side. Serve with a salad and enjoy! This mixture is great to have because you can add it to most any meal. Add chicken or lean meat for added protein. Eat on top of rice, in a salad, or with egg white scramble. The options are limitless!
