Chicken Sausage stir-fry

1 can black bean

2-3 chicken sausage links

1/2 red onion

1 red pepper

1 tbsp garlic

2 cups mushrooms

2 cups zucchini

1 tbsp Indian curry

1 tbsp chili pepper

salt/pepper

Side of Rice (weigh this) I used 100g.

Sauté mushrooms. Add zucchini and peppers, mix and cook for 3-4 minutes. Add onions and garlic. Add sausage. Add all other ingredients. Mix well and simmer for 10 mins. I like to remove the casing around the sausage links but you don't have to. When choosing a chicken sausage select one that has 6 or less grams of fat and around 12g of protein. I used 2 sausage links bringing the fat total to 12g for the entire dish. Serving size is 1 cup. Enjoy!
