Apple and Quinoa Salad
1/2 cup quinoa
1 cup chicken broth to cook quinoa in
1/3 cup dried cranberries-get the low sugar ones
1/3 cup slivered almonds
2 tbsp sunflower seeds
3 cups spinach
2 cups cabbage
1/3 cup fat free or low fat feta (optional)
Side of skinny girl poppy seed salad
Double ingredients for a larger salad.
Cook quinoa and let it cool completely. I put it in the fridge. Chop apple (peel if you want) and toss with lemon juice so it doesn’t turn brown. Chop up spinach into bite size pieces and toss with cabbage. Once cooled mix quinoa with apple, cranberries, almonds, sunflower seeds, and cucumber. Mix well with spinach and cabbage. Once everything is tossed enjoy with a serving of skinny girl poppy seed dressing or your own personal favorite. Just remember to measure and log!
