Roasted red pepper and chick pea salad

2 cans chick peas 1 can roasted red pepper chopped Handful of basil 1/2 cup Shredded carrots 1/2 cup Shredded cucumbers 1 cup shredded apples 1/4 cup fat free or reduced fat feta 1 tablespoon red pepper flakes Lemon juice of one lemon Salt and pepper

Rinse and drain chick peas. Set in bowl. Shred or chop all the vegetables, apples, basil and place with chick peas. Top with red pepper flakes, feta cheese, lemon juice, salt and pepper. Mix well. I like to chill for a couple hours before eating. Enjoy!
