1-2 heads of fresh broccoli
1 cans chick peas 1/2 red pepper 1 chopped apple with skin on
1/4 red onion chopped
2 tbsp dried cranberries (use grapes instead and it tastes just as great!)
2 tbsp walnuts or pine nuts
3 tbsp honey dijon mustard Juice from 1/2 lemon
1-2tbsp water Salt and pepper
Rinse and drain chick peas. In a bowl chop broccoli directly into the bowl, this keeps the mess down! Don't forget to chop stems too! Chop and add all other ingredients.
Place mustard, lemon, salt and pepper in mixing bowl and whisk. Add water to thin out the dressing. Pour over salad, mix well, taste and add salt/pepper if needed. Let it sit in the fridge for an hour before serving if possible. Enjoy!
